Seabass in Indonesian Opor Sauce 印尼椰汁鱸魚

Opor Seabass
I thought it was going to be so easy.
The idea sounded perfect in my mind.
1. Pan fry a piece of nice fish perfectly.
2. Prepare a flavorful sauce using instant spice pack
3. Garnish
In my mind, these 3 easy steps would turn the tasty Indonesian dish into something that looks "fine dining".
I should've known that I'm not a fine-dining material.

1. 剪好D魚
2. 用調味包
3. 裝飾吓
我成日都以為整到好似高級餐廳咁係好容易...

I butchered the fish!
I've failed to get the skin crispy and I've overcooked the flesh.
Grrrr.
Luckily, seabass is a pretty forgiving fish. So apart from looking horrible, it stays moist and yummy. Phew! And the sauce, I did use an instant opor (Indonesian coconut milk sauce) spice pack, but cranked it up with a lot of fresh ingredients, so it was really yummy!
I'll do better next time.

好彩鱸魚點整都係好食...除左望落去唔好睇, 食落去都仲OK既
個現成印尼椰汁調味包係得既, 成碟魚3D晒..仲有自己都加左好多配料落去

Recipe
The Sauce
Opor seasoning pack
- 1/2 cup coconut cream
- 2 cloves garlic, crushed
- 1 stalk lemongrass, crushed
- 2 cloves shallot, thinly sliced
- 4 kaffir lime leaves
- a touch of sugar, pepper, cooking oil, water
Saute garlic, lemongrass and shallot in a bit of cooking oil, add spice pack, add coconut milk, a bit of water, and a touch of sugar. Set aside
剪香D蒜頭, 檸檬葉, 紅䓤頭, 加調味包, 加椰奶, 加水, 加糖, 放埋一邊

The fish
- 2 fish fillet (I used seabass)
- cooking oil, butter, salt and pepper
Season fish fillet with salt, pepper, rub generously with oil. Heat up a frying pan. When pan is really hot, add the fish skin down. Let cook until the skin crisped (I was too impatient), add oil and butter when necessary, turn once, let cook for a bit (thin fish fillet cooks real fast!), place fish fillet on top of sauce. I garnish mine with mint leaves and ate it with a lot of rice.
條魚, 用監鹽, 油, 胡椒調好味, 同佢按摩吓. 整熱個獲, 落個皮煎先, 煎脆左, 落油, 牛油, 每面只可煎一次, 自己因時間. 上碟, 落埋D醬汁

Dammit. If only I cooked that fish perfectly...

Beef Rendang Pot Pie 印尼牛展餡餅

I wanted a pot pie with an Asian filling.
Something hot, spicy and hearty for the wet, sticky, rainy days.
Beef rendang came into mind.
If there's an Oscar for best Asian pot pie filling role, it would've gone to beef rendang.
Plus, I had a couple of rendang instant spice pack.
Perfect!
成日都想整D有亞洲風味既餡餅, 要又辣, 又香, 又有口感既
突然就比我諗到用牛展啦, 整印尼牛肉又唔想大費周章, 用現作一包一包既調味包就完美啦!

My best friend, frozen roti prata ^_^

其實都係買現成既..有辦法啦, 懶...
係超市買左盒急凍roti prata

Rendang Roti Pratha Pot Pie
Recipe
Pie filling
- 1 lb beef (I used beef shin cut into chunks, you can use other cuts of beef)
- 2 rendang spice packs
- 1 clove of garlic, crushed
- 2 cloves shallot, thinly sliced
- 1 lemongrass, crushed
- 4 kaffir lime leaves
- 1/2 cup of coconut cream
(All these fresh ingredients are optional, you can really do this with just the rendang spice pack. But if you chose to use these fresh ingredients, they do make a difference. It cranked the flavors up a new notches)
- 1 or 2 tsp corn starch diluted in a bit of water

Saute fresh ingredients in a bit of oil, add beef chunks, add rendang seasoning, cook until the beef chunks are tender (it may take a couple of hours), add coconut cream, thicken with a bit of corn starch. We don't want the pie filling to be too runny.
炒起D配料, 落牛展, 落調味包, 再加生粉水整傑佢

Pot pie top
- 4 frozen roti prata
- 1 beaten egg

Preheat oven to 200C. Pour rendang pie filling into small bowls, brush the edges of the bowl with beaten egg. Place frozen roti prata on top, don't worry about the excess edges. Brush the top of roti prata with beaten egg. Bake until golden brown and puffy.
預熱個焗爐去200C, 將整好左既牛展放入焗碗, 用蛋醬揸吓個碗邊, 放個酥皮上去, 上面揸蛋醬, 唔使理個酥皮, 佢自己焗個時會返落去, 焗到金黃色就攪掂

Looks and tastes amazing, very easy to make.
完部都係買現作, 應該都OK易整的 :)

哩個唔係自制雪糕...

Heheheh. Don't count on it.
Before I get an ice cream maker, I don't think so. The idea of "churning" ice cream mixture with a hand mixer every 50 minutes...it is not very appealing ^_^
冇雪糕機之前真係唔會再整雪糕...因為真係太多功夫...

My friend Ieie brought this Premium D24 Durian Ice Cream last weekend.

The fragrance (ahem!) sent my helper hiding in her room (She is one of those people who think that durian smells like shit. Opps. She needs some durian training), but for us, it is just not durianey enough. It's sweet and creamy, but not as good as a section of ripe, rich and fragrant durian flesh.
個榴槤飄香攪到工人姐姐要返房, 冇辦法, 佢覺得榴槤好似屎咁臭, 我地都幫佢唔到..但對我地黎講就係極品啦!!! 但係同真榴槤都仲未有得比..

We are just like durian lovers everywhere. We prefer the real deal to any durian products any day.

Udang Goreng Kecap Inggris - Prawns in Sweet Worcestershire Sauce - 印尼甜蝦

Udang Goreng Kecap Inggris
This is a popular Chinese Indonesian dish. Sometimes it's called udang goreng mentega (stir fried prawns in butter sauce), or udang goreng kecap manis (stir fried prawns in sweet soy sauce), or udang goreng kecap inggris (stir fried prawns in worcestershire sauce). Ah well, the name doesn't matter, for as long as we know that it's always guaranteed to be good.
哩碟係好出名既印尼華僑餸, 哩碟餸又有另一個名, 叫牛油/甜豉油炒蝦. 不過名唔緊要, 最緊要係好食!

It has the perfect balance of sweet, savory, acid and smoky. It's one of my favorite Indonesian-Chinese flavor combo.
又甜又酸又有獲氣, 係我最鐘意既其中一碟印尼華僑餸

Plus, again, it is very easy to make. Just a simple stir fry.
仲有, 唔單企好食, 仲好易煮添!

Recipe
- 2 garlic, crushed
- 1 cm ginger, crushed
- 4 shallot, thinly sliced (or half an onion, thinly sliced)
- about 12 of medium sized prawns (I used tiger prawns with shell)
- butter, cooking oil, light soy sauce, worcestershire sauce, Indonesian sweet soy sauce (kecap manis), ketchup, pepper
- 1 tsp corn starch with a bit of water to make the sauce stick to the prawns

Saute garlic, ginger and shallot/onion in a bit of vegetable oil and a couple tbsp of butter. Add shrimps, seasoning very quickly with the sauces until you reach the desired balanced flavor, add the corn starch mixture, and serve. The prawns cook very very quickly so you gotta be quick. If you're worried about overcooking the prawns, you can saute the prawns separately, prepare the sauce separately and mix it after the sauce is done.
用油同牛油炒熟D蒜頭, 薑, 紅䓤頭. 落蝦, 調味料, 落埋個Sweet Worcestershire 醬直到啱味, 落生粉水, 攪均, 攪掂! D蝦好快熟, 要煮得快, 如果驚煮得太熟, 可以分開炒熟左佢先.

A friend of mine bought this super refreshing drink at a recent Thai food fair in Times Square, Causeway Bay and I love love love it! It tastes almost as good as the real thing. Very refreshing, summery, and oh-so-tropical! But let's focus on the most important thing. That packaging! How cute!
我老友係銅鑼灣時代廣場既泰國食品節買比我既帝王椰子汁. 真係同真既一樣咁改, 好消暑! 但係最正都係個包裝!

Pan Fried Cheong Fun with XO Sauce 煮野有take 2之再生腸粉

I wish I could have this for breakfast every day.
I love the slightly crispy edges of the cheong fun (Chinese rice rolls), then the softness, and all kinds of tasty bits from the XO sauce....perfect with a cup of hot tea.
Hmmm, maybe I could have this every day.
It's easy to prepare after all...

真係想日日都有得食哩個早餐
鐘意食D焦焦地脆脆地既腸粉, 加埋XO醬同杯茶就完美了!

Pan Fried Cheong Fun with XO Sauce
I didn't make my own cheong fun, of course. It's the combination of laziness, lack of skills, and my chronic obsession with short-cuts.

腸粉係酒樓飲早茶食淨, 大家都可以係出面買

Simply use store bought cheong fun, pan fry with lots of XO sauce and a touch of light soy sauce until the exterior of the cheong fun gets just a bit crispy. I used generous amount of XO Sauce from Mandarin Oriental, super yummy!

煎香D腸粉, 落D XO醬, 攪掂

Serve with a good pot of tea. Perfect.

Dining Out with A Baby 同傲B去食(望)好野

This isn't a "how to" post, I have no tips on how to dine out with a baby in peace. I am just sharing our recent dining experience.
相信大家有小朋友都知同小朋友出街食飯有幾唔容易, 由其係頑皮嘅BB..

It was a Sunday brunch at Wooloomooloo Elements, we brought our 8 months old, super naughty, super active, and rather cranky baby Marcus.

All sharp utensils weren't arranged elegantly, they were piled up in a corner, out of baby's reach.

Three Egg Fried Rice 三色蛋炒飯

What are the three types of egg in this fried rice? Normal, salted and century (thousand year) egg. I loved the idea the moment SC threw it at me. Why haven't I thought of this before? We went to the market to buy our eggs.
琴日放假冇乜野做, 見有好多食剩飯, SC就好creative咁Google有乜炒飯可以整啦. 揾吓揾吓揾到個三色蛋炒飯, 個名好似好有霸氣, 就試啦. 三色蛋包括, 皮蛋, 咸蛋, 同雞蛋.

You must've recognized the regular chicken egg, the black one's the salted egg, and the grainy one is the century/thousand year old egg.
中國人應該好熟三種蛋, 黑色隻係咸蛋, 外面有一粒粒隻係皮蛋, 肉色個隻唔使講, 大家都知係雞啦

They were cleaned and then boiled for about 10 minutes, starting from cold water to prevent from cracking.
清理好D黑色同一粒粒野, 就洗乾淨佢地, 放入室溫水煲10分鐘

Recipe
(serves 4)
Adapted from here
- 2 eggs (1 boiled, 1 beaten and seasoned, to be scrambled later)
- 1 salted egg, boiled
- 1 century/thousand year egg, boiled
- 3 sprigs of scallion, thinly chopped
- a handful of dried shrimps, soaked in water until softened, roughly chopped
- 4 servings of leftover rice
- vegetable oil, salt, pepper, sugar, fish sauce, chicken powder (optional)

食譜
(四人量)
- 兩隻蛋, 一隻烚熟, 一隻打散佢調味, 炒做蛋花
- 1 隻咸蛋, 烚熟
- 1 隻皮蛋, 烚熟
- 3 條䓤, 切碎
- 1 手咁多既蝦米, 用水浸軟(大概要浸2 個鐘), 切細佢
- 四人量既剩飯
- 油, 鹽, 胡椒, 糖, 魚露, 雞粉(自選)

Roughly chop the boiled three eggs, set aside. Saute dried shrimp chunks in hot oil, add scallion, add egg chunks, add rice, mix well, add beaten egg, scrambled, mix everything well, season with salt, pepper, sugar, chicken powder and fish sauce, serve hot.
將D蛋切粒, 備用. 炒香D蝦米同䓤, 加飯, 攪均, 加蛋, 攪均, 用油, 鹽, 胡椒, 糖, 魚露, 雞粉調味

Chocolate Brownie Cookies - My First Mother's Day 朱古力曲奇 - 我的第一個母親節

Did I make these cookies to celebrate my first mother's day?
Not really. I made them because I had nothing more to post on this blog. I am such a bad blogger. Do you appreciate my honesty? Not really? Oppps. Heheheh.

大家唔好以為我自己整曲奇比自己做母親節禮物, 其實冇晒野Blog..

But it was my first mother's day. How exciting!
但係傲B出世後, 今次係我第一次真真正正作為一個媽媽咁過母親節!太令人興奮了

I grew up being taught to pamper our mom to the max on mother's day. Did I get pampered that day? Not really. Our helper's off, SC and I have to work hand in hand to take care of baby Marcus together. But I did buy a bunch of flowers to be shared with SC's mom.

個日工人姐姐休息, 傲B又好攪攪震, 攪到我地勁忙, 最後我地都買左一紮花, 比自己同SC媽媽(一紮兩份用XD)

It means that I get to take pictures of the flowers and she gets to keep the flowers. We are quite a thrifty family ^_^

Chocolate Brownie Cutout Cookies

And ate the delicious cookies. They're soft (I am not a big fan of crispy cookies), very chocolatey and surprisingly easy to make!

D曲奇好軟, 好濃朱古力味, 正!

Chocolate Brownie Cookies
Recipe (食譜)

(source Smitten Kitchen's Brownie Roll-Out Cookies)
- 1 and 1/2 all purpose flour
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1 stick of unsalted butter
- 3/4 cup sugar
- 1 egg
- 1/3 cup & 1 tbsp unsweetened cocoa (I used Hershey's)
- 1 tsp instant coffee

Preheat oven to 180C. Whisk flour, salt and baking powder in a bowl and set aside. Mix butter, sugar, egg, vanilla and cocoa (I used hand mixer, OMG! It gets rather hard to mix in the end). Add flour mixture gradually, mix well. Wrap in plastic and chill for at least one hour (I misread this and only chilled for half hour, no wonder my cookies are in weird shapes...).
Roll out cookie dough on a lightly floured surface, cut with cookie cutter, bake on a parchment-lined baking sheet for 8-11 minutes or until the edges are firm and the center are slightly soft and puffed.
預熱焗爐到180度, 係個碗攪拌麵粉,鹽和發酵粉, 擺埋一邊, 撈埋D牛油,糖,雞蛋,香草同可可(唔知點解, 用機反而仲難攪..)慢慢加D入麵粉混合, 攪均. 包住佢等佢凍(大概一個鐘)
整平D麵粉混合, 用D曲奇切割器切D曲奇出黎, 放係曲奇紙上烤大概8-11分鐘, 直到D曲奇角硬左就OK

Although my cookies look horrible, they are yummy! I will be making this often, and maybe add some fun frosting on top :)

Ham & Cheese Chicken Roulade FAIL 失敗的芝士火腿雞肉卷

一睇就知係失敗之作..

One day, I saw Athena's ham and cheese chicken roulade, I love the idea and decided that I was going to make it.
有日我見到Athena整芝士火腿雞肉卷, 見佢整得咁靚, 我就試吓啦

I am very bad at following recipes, I pretty much just looked at the pictures briefly and I was convinced that I could do it. I was wrong.
其實我唔係好識睇食譜, 多數都係睇住張相就黎整..

I used a slice of ham and a slice of cheese for half a chicken thigh, so I didn't have enough chicken to cover the filling, I couldn't seal the chicken properly and the cheese leaked all over the place...
整整吓先發現件雞唔夠大件...包唔埋..

Yikes! Taste-wise, it was delicious, since I seasoned the chicken really generously, and the skin turned nicely golden. Anyway, I will try again, I will succeed, and I will post the recipe.
可惜, D埳溜晒出黎, 雖然唔好睇, 但係食起上黎又好好食喎!

Sambal Terong - Spicy Eggplant Chilli Paste 印尼四椒矮瓜

Just Another Lunch at My Place
Remember the spicy eggplant sambal from the lunch gathering at my place? Here are the stuff that went into it.
哩個係上次午餐飯眾既其中一味餸

Eggplant Sambal
While preparing the sambal ingredients, cut a large eggplant into chunks, drizzle with oil, season with salt and pepper, grill in 200C oven until softened with some charred bits.
切細D矮瓜 (切到一舊舊), 加少少油, 調味料, 鹽, 胡椒, 用200C黎烤, 到軟同少少焦為止

The chilli paste
- 0.5 cm ginger, peeled
- 5 cloves of garlic, peeled
- 5 cloves of shallot, peeled
- 4 large green chilli, core and seeds removed (I didn't want to kill my guests heheheh)
- 4 large red chilli, core and seeds removed you can leave them alone if you want it really spicy)
- 4 small chilli (this is where the heat's from)
- 2 tsp ground cumin
- 2 tsp ground corriander
- salt, sugar, pepper, vegetable oil
- to add later: lime leafs, crispy shallot, fish sauce

Throw everything into food processor and pulse into a paste.
放晒D材料去食物加工器, 撳制

Eggplant Sambal
Heat 2 tbsp oil, saute everything until fragrant, add the grilled eggplants, adjust seasoning if necessary, add lime leafs, garnish with crispy shallot. Consume with lots of rice :D
落2湯匙油, 煎到香就加矮瓜, 調味, 攪掂~ :D

Mie Ayam Jamur with the Best Homemade Egg Noodles 自家制印尼雞麵

I have a constant craving for mie ayam (Indonesian chicken noodle), and so far, I haven't been happy with all the ready made noodles that I've tried. There's one Indonesian restaurant in Hong Kong that serves mie ayam with homemade egg noodles just like what we have in Indonesia, but I prefer a different type of chicken topping, which I can make at home, but they won't sell me their handmade noodles. This is really frustrating! I want the perfect combo! Perfect noodles and perfect topping! Is that too much to ask? (It probably is. Heheheh)
我對印尼雞麵有種情有獨中, 有份情, 食過現成個D好多都唔係咁掂. 係香港有間都係自制既雞麵, 都係用蛋做嘅, 但係我唔係咁鐘意佢個餸. 可惜佢地冇得浄買面..

Luckily, a good friend of mine, Ieie, was willing to share her uncle's homemade egg noodles recipe. He uncle was a mie ayam vendor in Indonesia. Wow! How perfect! So, one fine day, we braved ourselves and tried to make the noodles (actually Ieie made the noodles, we just "helped" i.e. annoyed her). We also prepared some backup store-bought noodles, in case we failed miserably.

Indonesian Mie Ayam Jamur with Homemade Noodles

下面就係秘傳嘅食譜, 要問准好多人先放得上黎架, 大家整嘅時候真係要心存感激呀!!
Indonesian Mie Ayam Jamur with Homemade Noodles
(we made half of the recipe, serves 4)
我地將個食譜除左半, 四人食

- 1 kg of all purpose flour (for best result, we used Indonesian flour, Cakra Kembar)
- 2 tbsp vegetable oil
- 4 egg white, 6 egg yolk, beat together
- 1 tsp salt
- 1 tbsp alkaline (air ki)
- water (room temperature)
- corn starch for rolling and to keep noodles from sticking
- a big pot of boiling water with a touch of oil to cook the noodles

- 1kg 麵粉 (最好可以用印尼麵粉)
- 2 湯匙 植物油
- 4 隻蛋白, 6個蛋黃, 一齊攪均
- 1 茶匙 鹽
- 1 湯匙 食用碱水
- 水 (室温)
- 生粉 (用黎整到冇咁癡)

Mix eggs, oil, salt, alkaline and a bit of water in a bowl.

Knead the dough while keep adding more flour, keep kneading until the dough is no longer sticky (it took quite a while, more than 20 minutes for us, beware of sore arms)

Bring a large pot of water to boil, add a couple tbsp of oil, dump the noodles in.

- 2 chicken thigh fillet, diced
- 1 cup of straw mushrooms, cut into chunks
- 3 cloves of garlic, minced
- 2 shallot, thinly sliced
- fish sauce, light soy sauce, pepper, a touch of Indonesian sweet soy sauce (kecap manis), vegetable oil
- crispy shallot and scallion for garnish
Saute garlic and shallot in hot oil, add mushroom chunks, add chicken chunks, season, and ready to serve. Prepare the topping ahead of the noodles.

To assemble, add 1 tsp sesame oil, 2 tsp vegetable oil, 1 tsp light soy sauce, 1 tbsp fish sauce into individual bowls, add noodles, mix well, add chicken and mushroom topping, serve with chicken broth on the side (I used store bought chicken stock), garnish with crispy shallot and scallion. Add boiled choy sum, dumplings or meat balls. I served mine with fried chicken and shrimp balls.

It's hard work, but it's totally worth it! I ate two bowls of this perfection! I want it again now.
